Wara
History Inocencio Mamani Cori began growing coffee in 1993 in order to
provide for his seven children and three grand-children. But in previous
years the price of coffee was too low to really make a living. “Thanks
to competitions like the Cup of Excellence,” commented Inocencio, “The
price of coffee has increased noticeably. Unfortuneately in previous
years I didn’t make it the auctions, but now I just couldn’t believe,
and neither could my wife and children. We are all very happy to have
won a Cup of Excellence this year and now we’ll be able to increase our
production by another two hectares.”
Inocencio and his wife currently have a plant nursery with 1000
coffee seedlings and 50 seedlings of mahogany which they will use to
establish new areas of coffee production.
Quality Practices
Ripe cherries are hand harvested from June to September. Depulping is
done daily immediately after harvest on-site. Depulped coffee is
fermented for 15 hours and washed with clean water from mountain
springs. The coffee is then sun-dried on drying tables.
