Farm Histroy
Sítio São José belongs to Mr. Neles Nelson Huguinim Fernandes,
and the property is managed by his son-in-law, Júlio Deorce de Melo. The
farm is located in the region of Mountain of Espírito Santo, at 1150 meters
high, with an average temperature of 17°C.
Care is exerted to preserve the environment. Coffee is
planted following the contour lines, and in addition to conventional fertilization,
performed according to soil analyses and recommendations from an agronomist,
it is complemented with organic fertilization. The farm has a large area
of native forest, with numerous water sources.
Coffee processing system
Coffee is hand picked and on the same day the beans are
transferred to the cherry pulper to be pulped, passing through a washer,
and then the cherry beans are separated from the green beans and the dry
beans.
After the beans are washed, they are transferred to a
cement and covered terrace, similar to a greenhouse, where they remain for
approximately two days, and are turned over about 20 times a day.
The beans are then sent to an indirect fire drier, to
reach their ideal humidity, and then receive final processing. Subsequently
they are bagged in new bags are stored in masonry bins on wooden platforms.
Concern with quality
Up keeping begins with planting the nursery trees and
continues until the coffee is stored and then sold. The greenhouse is sanitized
and since the beans are turned over many times a day, their fermentation
is prevented.
The employees' time is totally dedicated to coffee growing,
and all of them believe that this makes a difference.
