| Overview In the division of her family’s
estate, made among 11 children, the owner inherited from her father not
only the Fazenda Baixa da Pedra land, but also the passion for this
fabulous beverage – coffee.
This passion is demonstrated by her constant presence in coffee
plantations, with the purpose of producing quality cups. The farm’s
management has a commitment to maintaining the harmony between
technology and the environment, giving priority to the adequate handling
of soil and water to preserve the existing vegetation and wild animals.
Employees have access to schools, as well as to transportation,
health care and leisure, through contacts with relevant entities and
associations.
Coffee processing system
The harvested ripe beans are washed and pulped as
soon as they arrive from the plantations, and then they are spread in
thin layers on a concrete terrace during the first days. Revolved many
times a day, in a slow drying process, coffee remains on the terrace
until its humidity reaches 11 degrees. Subsequently, it is bagged and
stored in pergamino. The above-mentioned lot received final processing
right after the announcement of the first phase finalists of the Cup of
Excellence Competition, and was transported to the Cooperative.

Maria Aparecida Dias de Castro is a member of
COCARIVE - Cooperativa de Café do Vale do Rio Verde [Rio Verde Valley
Coffee Cooperative], and receives from COCARIVE all the support and
supervision she requires.
