Overview
Sagrado Coração de Jesus Ranch is located at three kilometers from
the city of Carmo de Minas, in the South of Minas. Its house is found in
a valley, among mountains, and the coffee crops are found at altitudes
that vary from 3608 to 4494 feet. Mr. Álvaro Antônio Pereira Coli’s
parents raised the family trough the coffee plantation on their farm
until 1995, when they donated the property to their children that
together decided to carry on with the coffee production.
Processing system of the coffee beans
All the harvest is done by hand, over clothes, to avoid the contact
of the coffee beans with the ground. The chosen coffee is washed and
pulped in the same day of the harvest. The drying is done only on patios
so that it can be slow and homogenous, and after a long time of rest,
the coffee is processed and stored in warehouses from the Cocarive,
where the testers do the analysis of the quality.
Concern on the quality
Technicians and classifiers from COCARIVE and EMATER – MG, both
located in Carmo de Minas, supervise the search for modernization and
improvement of the techniques, mainly in the preparation of special
coffees. It is a hard task that requires a lot of work, care and
investments on hand labor. However, it is very rewarding when we see the
soil producing “the green gold” (as the coffee was called long time
ago), with recognized quality in 2003 for the classified sample, among
the finalists of the Cup of Excellence, and in 2007, among the finalists
of Illy. Taking into consideration the importance of the environmental
preservation, the producer is certain that and integration between the
man and the environment provides a sustainable coffee production and
with a higher quality.
