Overview
The coffee production on the Cachoeirinha Farm, located in the city
of Cristina, has been practiced for a long time, and the current owner
is Mr. Luiz Delfino de Paiva – “Luizinho”, who inherited the land from
his father, who was also a coffee producer. The property has a coffee
production on the mountains, with a mild climate and is located at an
altitude of 3937 feet, where the owner “Luizinho” works with the coffee
crops, with the help of his family. He always follows strictly the
orientation of the technical department of COCARIVE Cooperative. His
attention and care include since the handling with the crops (planting,
fertilizing, harvest, drying, processing) until the well being of his
family (his wife and eight children – three out of eight work in the
property). He also worries about the soil conservation, working with the
erosion control and the soil fertility. The protection to water springs
is done through the plantation of trees around all the area.
Processing system of the coffee beans
The harvest is done by hand, branch to branch, selecting only the
coffee berries and they are harvested and taken by carts or with he help
of animals to the washing machine on the same day. After that, it is
pulped in a small Pulped machine and spread in slim layers on the
cemented patio. During a period between 10 and 15 days the coffee is
raked at least each half hour during the day and covered every afternoon
until the next day morning. After this period, the coffee is stored in
wood storehouses, where it rests for sixty days. And then, the coffee
goes back to the patio to reach the ideal level of humidity and only
after this, it can be processed en delivered to the Cooperative to be
stored and prepared for sale.
Concern on the quality
Mr. Luizinho always attends technical congresses provided by the
Cooperative (COCARIVE), where they discuss about the best way to
preserve the quality of the coffee produced. Convinced that the quality
is obtained by the proper climate, altitude and nature, his task is only
to preserve these characteristics of his coffee. For that intent, all
effort is taken into consideration. The search for improvement is
constant, always according to the current economical reality, trying to
modernize the infrastructure. Nowadays, he is enrolled on the program of
Minas Government – “CertificaMinas”.
