| History Victor Perez lives in
the Aldea, San Miguel, La Iguala, Lempira´s Department, Honduras. He is
44 years old married with Maria Arcenia Hernandez, they have raised a
family of 8 children, 5 boys and 3 girls. He´s a coffee owner by
heritage and since 1990 he is an active member of the Cooperative
COMISAMIL. He has always been involved in the development of his
community, supporting different projects and activities. He´s a pioneer
in the Modernization of local coffee production.
Quality Practices
The coffee is processed by using traditional methods,
he owns a pulping machine and dry the grain by using the sunlight. No
chemical pesticides are used due to the farm is located in a National
Park
Environmental Care
This Coffee is shade grown and is under organic
management which comply with the Law of biological reserve "Puca
Mountain" in which his farm is located.
Fertilization
Bio-fertilizers produced in the same farm by using
the Californian earthworm (Eisenia foetida) and coffee pulp are the only
ones used. Prunes for sanitary purposes is the and for shade management
are the most practiced.
Disease and Pest Control
Cultural practices and biological control when
necessary. No chemicals pesticides are applied.
Harvesting
Handpicking of ripe grains of Coffee begins in December and finish in
April. This task is performed by skillful men and woman who are well
trained for picking only the mature grain.
Pulping and Fermentation
Mr. Pérez has a small infrastructure for wet milling. There are two
fermentation tanks, an a pulping machine. Also he has a classification
canal in which he separates the first, second and third quality coffee.
Drying
The drying of Coffee is done over cement platforms in his farm.
