Overview

Our cooperative was formed 16 years ago; it is currently composed of 20 members dedicated to the growing and producing coffee. The winning producers in the winning lot of this Cup of the Excellence are: Miguel González Gámez of 35 years, Jorge González Amador of 55 years and Nelson Omar González of 30 years. We are all heads of families and founders of the cooperative and lived in the community Laguna No. 1, in Dipilto, Nueva Segovia.

This award for us is incredible because we are aware of the high quality of all the samples that participated in the Cup of Excellence and we always thought that it would be difficult to win. We are satisfied because we know that the area of Dipilto has much potential and we could not be left behind.

We considered that by having a property with optimal altitude for the production of coffee and the proper wet milling that we do to our coffee has much influence on the quality that we produce. During the harvest we try to only pick the mature coffee cherries although sometimes it is not obtained, we pulp the cherries the same day the cherries are harvested, we allow for the proper fermentation time, and we wash the coffee beans with clean fresh water trying to keep the beans from coming into contact with the grown. If the climatic weather conditions favor us, we pre-dry and closely select the coffee parchment before the beans being transferred to the Prodecoop drying mill. Prodecoop is in charge of dry and milling the coffee while keeping a close watch on the quality the entire time.

We have arduously worked on the quality of our coffee and now after three attempts we have become a winner of the Cup of Excellence. We are very motivated to work hard in improving our quality in order to scale up in the position of winners for next year. We know that the Cup of the Excellence does not only benefit the winners, but, also benefits the entire country because all the coffee producers have dedicated themselves to produce quality coffee.
