Don Jaime is a very nice man and he speaks calmly, he owns many farms located at high altitudes, but “Santa Isabel” has open the doors to the international market, since this farm has become a “Role Model Estate” due to its cleanness but most of all because it’s friendly to the environment when it comes to the treatment of wastes.

It is very common to see over the coffee areas lots of nests of exotic birds, such as the ones seen in the picture. The chucking heard from the poultry yard decorates the farm; these are fowls that will feed in the future the workers of the farm.

The view from the furrows is splendid at any time and their location which is over 1,300 meters (4265 feet approx.) above sea level seems to help with its echo to the sound of the “Horn” (a musical instrument that looks like a rustic trumpet) calling the workers for their official lunch time. The response to the horn comes from the deepest part of the furrows with the jubilee shouts of the peasants.

Don Jaime states that when the workers are coming out from “monte” (forest) they bring out with them the dry branches and they placed them in a huge wall of wood fire, which will be used by the cookers in the preparation of meals. … “We optimize everything here, everything is in perfect order and clean… is a habit that I inherited from my father, when he was the former owner of these lands” almost immediately his kind face turns sad and changing the tone of his voice, he tells us….

“It seems unbelievable that this paradise was besieged by the years of wars during the 80s. Torcuato Pérez and Nicolás Vargas, two workers of this farm, were kidnapped by the “contras” and never came back… We heard that many of them when trying to escape were shot or they stepped over mines that exploded and ended their lives or mutilated their members.”

Don Jaime ends by saying: Today things are different; the peaceful time that we are living has allowed us to come out to the world with our best presentation letter “a great quality coffee”. He knows what he says.
